The original and genuine cinnamon, Ceylon cinnamon, comes from Sri Lanka and is known for its mild, sweet taste and fine aroma. Unlike common cassia cinnamon, true cinnamon has thinner bark, lighter color, and lower coumarin content.
The name cinnamon comes from the Italian canella, meaning small tube, explaining how the thin bark pieces naturally curl up when drying.
