Maitake, also known as hen-of-the-woods, is a mushroom that grows in clusters at the base of trees. It is common in Chinese and Japanese cuisine and is appreciated for its delicious nutty flavor. In Japan, Maitake is called "the king of mushrooms" thanks to its impressive size as it can grow up to 20 kilos.
