Shoyu is an organic fermented soy sauce of high quality manufactured according to traditional Japanese production methods. Shoyu is a Japanese soy sauce that is slightly sweeter and lighter than Chinese soy sauce. It has an excellent taste with a fine flavor and contains reduced salt content compared to most soy sauces.
How the soy sauce is made:
The soybeans and wheat undergo initial fermentation to produce Koji. A second fermentation lasting 6-12 months takes place in a temperature-controlled tank. Two fermentation phases are monitored to achieve optimal flavor and nutritional properties. Different aromatic compounds are obtained depending on the fermentation settings. No preservatives or additives are used. Aromandise analyzes the organic soybeans used to ensure they are GMO-free.
