How is it produced?
As the growing season progresses, tea farmers gradually begin to protect the tea bushes from direct sunlight. To produce matcha, a wire frame must be installed over parts of the bushes, and farmers add layers of bamboo and netting over the frame to eventually allow only 10-20% of direct sunlight through. Although most of the sun is blocked, rain still filters through and the structure maintains good humidity levels.
Another method, called jikagise, involves wrapping tencha bushes with cloths, which essentially provides the same effect as the first technique.
In both cases, the purpose of protecting the tea plantations from the sun is to reduce the photosynthesis process. This creates a milder taste, as the reduced photosynthesis decreases bitterness. The shade-growing process also increases the concentration of L-theanine content. When the tencha leaves are ripe, they are hand-picked, steamed, and air-dried. Unlike other tea leaves, they are kept flat so that stems and veins can be removed. The leaves are then stone-ground, an ancient technique that is kept alive for the most refined tea. The matcha powder is now ready.
Usage: Use matcha powder in smoothies, juices, baked goods, desserts and food, as well as make "matcha latte". Can also be used in cake bases and pancakes.
If you find the matcha too bitter for your taste, you can:
- Let the hot water cool down to approximately 70-80 degrees when you "brew" it.
- Reduce the amount of matcha powder.
- Add a small amount of sweetener such as honey or xylitol.
