Ingredients
2.5 dl brown rice flour
1 dl coconut flour
1 dl buckwheat flour
2 teaspoons baking powder
1 teaspoon salt
2 organic eggs (If you don't want to eat eggs, replace with 2 tbsp chia seeds and 6 tbsp water. Mix together and let stand for about 20 min until it becomes a pudding)
0.6 dl coconut oil
3.5 dl almond milk mixed with 1 tablespoon apple cider vinegar
2 teaspoons honey, agave syrup, coconut sugar syrup or maple syrup
How to make
Heat up a waffle iron.
Whisk eggs (or chia pudding), coconut oil and almond milk in a bowl.
Whisk all the dry ingredients in another bowl.
Pour the wet mixture into the dry mixture and mix by hand, the batter should be thick but pourable.
Fill the waffle iron with a scoop of batter and let it cook until done. You can use coconut oil as a lubricant in the waffle iron.
If you don't have a waffle iron, you can make pancakes instead.
Enjoy with delicious jam!
