Carob is a legume that comes from the evergreen carob tree (Ceratonia siliqua). It's actually a bush that is shaped into a tree. It takes 6-8 years for a carob tree to bear fruit. It then continues to produce fruit for a hundred years. A mature carob tree produces several hundred kilos of fruit per year. The carob fruit pods are red to dark brown and can grow up to 30 cm in length. The pod is long, slightly curved, and thick. Carob is native to Southern Europe, North Africa, and the Middle East. Carob is now also cultivated in other warm parts of the world such as Florida and California.
Carob was an important source of sweetening before the cultivation of sugarcane and sugar beets began. For thousands of years, carob has been widely used by civilizations in the Mediterranean region as well as those along the Adriatic Sea. Carob is also called St. John's Bread because John the Baptist ate it during his time in the wilderness (Matthew 3:4), and it was also a great favorite among the ancient Egyptians who used it to maintain good digestion and for sweetening.
Carob powder is made by grinding the ripe pods into a fine powder that is packed with valuable nutrients such as fiber, protein, B vitamins, calcium, magnesium, potassium, iron, manganese, and chromium. Carob contains as much vitamin B1 as asparagus and strawberries, as much niacin as lima beans, lentils, and peas, and more vitamin A than eggplant, asparagus, and beetroot.
