Broccoli sprouts are extremely rich in nutrients and very tasty. They contain vitamins such as A, C, B and E, as well as minerals like calcium and potassium. The sprouts are more nutrient-dense than the mature plant and also have a higher content of potent compounds like sulforaphane.
How to sprout?
1. Soaking:
Rinse the seeds thoroughly under running water. Use approximately 1 tablespoon of sprouting seeds. Place the seeds in a jar/bowl and cover them with cold water. Soak the seeds overnight.
2. Rinsing:
Rinse the seeds thoroughly in water. If you are using a sprouting rack with trays, make sure to spread the seeds evenly. This type of seed can be sprouted in all types of sprouting equipment. Keep in mind that they will increase in volume. Always water the seeds 2-3 times a day until they have finished sprouting.
3. Placement of the sprouting jar:
Store the sprouting jar or trays at room temperature and in good light conditions. Choose a bright spot but not in direct sunlight. Prevent the accumulation of excess water and moisture.
4. What to look for:
After a few days, you will see small shoots forming - this is the beginning of sprouting. You may notice small white fibers on the shoots. This is completely normal but can easily be mistaken for mold at first glance. Mold has a musty smell and looks like gray fur, not the same thing.
5. Harvest:
The sprouts are ready to harvest after approximately 6-8 days. After one sprouting cycle, wash all equipment and let it air dry.
Storage: If the sprouts are not to be eaten immediately, they can be stored in the refrigerator for 2-3 days and should be rinsed before each consumption.
Seed storage: Keep in a dry, cool and dark place.
Using sprouts: Sprinkle over salads, add to soups, wraps, sandwiches, or any type of food.
