Facts: Baking soda is produced from sodium salt from carbonic acid, a natural combination of carbon dioxide and water. Previously, it was extracted from soda, but today it is usually produced with carbon dioxide from, for example, rock salt. Baking soda can be purified to almost 100% and should not be confused with baking powder, which consists of sodium bicarbonate mixed with stabilizing and anti-caking agents.
