The honey is harvested 3-4 times per year, and each harvest is unique in taste, color, and consistency, depending on which flowers the bees have had access to during the season. As the name suggests, the first harvest honey is the year's first crop. It has a coarse-grained and firm consistency but is still easy to spread. The flavor is mild and soft with distinct notes of rapeseed and fruit trees.
The honey is handled carefully from hive to jar and is never heated. To understand which flowers the bees have visited, each harvest is sent for pollen analysis where pollen grains are counted under a microscope. Each flower has unique pollen grains, making it possible to determine how much of the honey comes from each plant.
This is a genuine artisanal product, created without heating or pasteurization, just as honey should be. Frost patterns that sometimes form in the jar are a natural crystallization pattern that occurs with low water content. This is completely normal and affects neither taste nor quality.
