Matcha is made from tencha, where the tea bushes are shaded during the last weeks before harvest. This method increases the content of chlorophyll, L-theanine, and depth of flavor. After harvest, the leaves are gently steamed, dried without rolling, and cleaned of stems before being ground into an ultra-fine powder in stone mills.
