Organic Cashew Nuts
Cashew nuts originate from Brazil but are today mainly cultivated in tropical regions of Southeast Asia and Africa. They are an excellent source of protein, healthy fats, and minerals such as magnesium, manganese, and iron. Cashew nuts are a highly popular nut in cooking as they are so easy to use and versatile with their mild, sweet flavor.
Usage: Soak for 2 hours before use. Soaking helps access their nutrients and makes them more digestible for our digestive system. Cashew nuts can be eaten as snacks or as a between-meal treat. They can be used in cooking; in stir-fries, sauces, pesto, salads, desserts, or chocolate. Or why not make "cashew cheese", plant-based milk, or "cashew ice cream"?
Cashew sauce:
2 dl cashew nuts (soaked)
2 dl water
2 cloves of garlic
1 small chili pepper (deseeded)
1 red bell pepper (deseeded) - for intense flavor, you can roast it in the oven first and peel it
fresh thyme and/or oregano
a splash of lemon juice (optional)
Alternatively:
-a piece of peeled, fresh ginger
-chopped lemongrass or dried
-chopped cilantro to taste
Blend everything in a powerful blender.
