It is harvested only every other year, by hand, from June to August, resulting in a high content of phytonutrients. This Mate is produced by about sixty families who defend their lifestyle and the preservation of the local ecosystem against the advance of industrial agriculture.
To preserve the leaves, they are steamed for a few seconds, which is a milder and healthier process than the traditional steaming method. This way, the flavor, active ingredients, and green appearance are preserved. The leaves are then dried, matured, and finally packaged and inspected to ensure a product of the highest quality, free from harmful substances.

How do I prepare Mate tea in a gourd?
Fill your gourd to 2/3 with Mate leaves, use less if you prefer it milder, and more if you want stronger tea. Pour a little cold water over the leaves.
Then pour hot water (70 to 80 degrees). Never use boiling water. Insert the bombilla and let it stand for a moment, then just enjoy. When the water runs out, you can refill it again and again. The flavor decreases with each infusion, but you can refill many times as long as you find it tasty. Never stir with the bombilla, just let it be, otherwise its filtering effect will be destroyed.
