Irish Moss
Irish moss is an algae, Chondrus crispus. It is also known as carrageen, carrageen moss, pearl moss, cartilage weed, carragen moss, Irish moss, or simply carrageenan. Irish moss is a red algae that grows along the Atlantic coasts of Europe and North America. It is common around Ireland and England but also occurs in Iceland and the Faroe Islands. The color can vary from green-yellow to red-white-purple. In appearance, it looks like a small tree and grows to about 20 centimeters in height.
Usage: When Irish moss is boiled, it forms a mucilage that is said to be nutritious and easily digestible. It naturally contains carrageenan, which is a thickening agent (E407) and a plant-based alternative to gelatin. In conventional food production, Irish moss is used in foods such as jam and ice cream. But since the mild algae taste can be rinsed away, it is also perfect for puddings, creams, and mousse-like raw desserts.
Instructions:
- Rinse thoroughly. Calculate approximately 20 grams for a large raw food cake. See recipes online.
- Place the moss in a plastic bowl, cover with water, put on the lid, and place in the refrigerator.
- The seaweed is ready to use after one day, but works best after 3-4 days and lasts up to 7 days in the refrigerator.
- Blend without the soaking water with desired liquid (about 2 dl). Try to get the pieces as small as possible.
- Rinse in cold water for a few minutes before use.
The taste is almost neutral.
