Matcha is a finely powdered green tea used in Japanese Zen Buddhist tea ceremonies. Matcha has the same properties as leaf green tea, but since the whole leaf is used, it becomes extra nutritious. The antioxidant effect is extremely high. It is rich in vitamins A, C and E. Matcha also contains the special amino acid L-theanine which is only found in green tea.
How is ceremonial Matcha made?
Only the finest leaves are picked: spring leaves from the first harvest of Gyokuro quality. The twigs and buds are separated for other uses.
Step 1: blocking of fermentation after harvest through a brief steam treatment.
Step 2: immediate cooling in a stream of fresh air.
Step 3: six dehydration processes.
Step 4: an additional drying process to remove any remaining moisture.
Step 5: grinding begins, which occurs very slowly using small granite stones: at a rate of 100 grams per hour per millstone.
Preparation: Add 1 teaspoon of powder to a cup with 60 ml of boiled water (70°). Whisk with the bamboo whisk until the matcha forms a foam layer, wait 2 minutes, and it's ready!
Matcha whisk or Chasen is a fine element for a Japanese tea ceremony. This whisk is made from golden bamboo with 100 bamboo prongs, to achieve perfectly blended tea with foam on top.
Whisk care instructions: after use, rinse with clean water. Do not use cleaning agents.
