Cacao Nibs
Cacao beans are crushed to produce so-called cacao nibs. They are partially fermented to minimize bitterness and are processed at very low temperatures to maintain maximum nutritional value. As soon as the beans are removed from the cacao fruit, they are rinsed in purified water before being peeled and crushed into smaller pieces called "nibs".
These cacao nibs are made from organic genuine criollo cacao and are grown in the Pangoa Cooperative in the Satipo province of the Peruvian central jungle. The cooperative went through a very difficult time during the terrorism in the 80s when the women decided to help their men cultivate cacao and develop the cooperative. Today, it is the women who make the decisions regarding the cooperative's cacao production.
You can eat the nibs as they are, make your own raw food balls, sprinkle them over a fruit salad, create an energy mix, or add them to a smoothie.
