How Tamari is made:
The soybeans are fermented initially to produce Koji. A second fermentation lasting 6-12 months takes place in a temperature-controlled tank. Two fermentation phases are monitored to achieve the best flavor and nutritional properties. Different aromatic compounds are obtained depending on the fermentation settings. No preservatives or additives are used. Aromandise analyzes the organic soybeans used to guarantee they are GMO-free.
