Yacon contains very few calories and has a very low glycemic index. Yacon contains approximately 50% inulin - a so-called "prebiotic" that passes through the intestine without affecting blood sugar and has a beneficial effect on the good gut bacteria. Additionally, Yacon syrup contains minerals (especially iron), vitamins, and antioxidants.
