Organic Cacao Mass
Cacao mass is 100% pure cacao and therefore produces a very dark and intense chocolate when used alone as a base. The cacao mass is delivered as a block, just like cacao butter, and can be advantageously mixed with cacao butter and/or coconut oil/hemp oil to achieve a softer and lighter chocolate if desired.
Raw cacao contains more antioxidants, enzymes, and other nutrients than regular, roasted cacao. The cacao bean contains, among other things, sulfur which is good for skin, hair, and eyes - as well as significant amounts of magnesium, calcium, iron, phosphorus, potassium, chromium, and B vitamins.
Usage: Cacao mass needs to be melted or grated before you can use it. Melt it over low heat, preferably in a water bath, or grate it with a regular grater into fine "sprinkles". Here are some ideas on how to use it, but be creative and let your imagination flow.
- Make your own raw chocolate: melt cacao mass and mix with cacao butter, coconut oil, vanilla powder, your favorite sweetener (lucuma, yacon syrup, coconut sugar, coconut nectar, agave, stevia, or honey) and optional flavorings such as nuts, dried berries, ginger, chili, green tea, mint, etc.
Let it sit in the refrigerator for a couple of hours before serving. You can also garnish fruit/dip fruit, nuts, or berries in this delicious, healthy chocolate.
- Use in cookies, brownies, or pies - just add one tablespoon or more to taste.
- Mix with dried fruit, nuts, and coconut to make "energy balls". You can then add your favorite superfoods such as pollen, lucuma, maca, mesquite, spirulina, etc. to the balls.
- Mix with almond milk, oat milk, or rice milk and honey for a creamy dark and rich chocolate drink. Feel free to flavor with ginger, cardamom, or orange.
- Use grated in muesli, over fruit salad, as a seasoning in sauces and stews, etc. Goes very well with chili in food.
