Marie's Bee Craft Early Summer Honey is a small-scale, Swedish honey from beehives in the areas around Malmö and Lund. The honey is harvested 3-4 times a year, and each harvest is unique in taste, color and consistency, depending on which flowers the bees have had access to during the season. Early summer honey is light and mild where fruit tree blossoms have mainly given the flavor along with rapeseed and a little horse chestnut. It has a buttery, soft and spreadable consistency.
The honey is handled carefully from hive to jar and is never heated. To understand which flowers the bees have visited, each harvest is sent for pollen analysis where pollen grains are counted under a microscope. Each flower has unique pollen grains, making it possible to determine how much of the honey comes from each plant.
This is a genuine artisanal product, created without heating or pasteurization, just as honey should be. Frost patterns that sometimes form in the jar are a natural crystallization pattern that occurs at low water content. It is completely normal and affects neither taste nor quality.
