The honey is harvested 3–4 times per year, and each harvest is unique in taste, color, and consistency, depending on which flowers the bees had access to during the season. Linden honey has gained its flavor and color from Linden trees in Malmö. It is a genuine varietal honey with over 50% nectar from Linden, which is fresh with distinct notes of linden and a hint of mint. The consistency is firm and frost patterns may occur.
The honey is handled carefully from hive to jar and is never heated. To understand which flowers the bees have visited, each harvest is sent for pollen analysis where pollen grains are counted under a microscope. Each flower has unique pollen grains, making it possible to determine how much of the honey comes from each plant.
This is a genuine artisanal product, created without heating or pasteurization, just as honey should be. Frost patterns that can sometimes form in the jar are a natural crystallization pattern that occurs with low water content. It is completely normal and affects neither taste nor quality.
