The olive oil is organically certified as well as origin and quality certified; D.O.P. Monte Iblei, by the Italian Ministry of Agriculture. This control and certification guarantees that it is a 100% pure oil made from olives from this region and that pressing has been done without heat and chemicals.
This oil comes from a single estate. This means that no olives from any other harvest are included. Every olive that has contributed to the oil has been carefully inspected. No outsiders have had access to the trees, harvest, pressing, or storage at any stage.
The trees are of the Tonda Iblea variety, which is only grown in the Ragusa Valley in Sicily. This olive variety has been designated as one of the world's finest olives for oil production.
The olives are hand-picked and pressed within a few hours into a wonderful thick oil that rests in steel tanks for several months to clarify and become more durable over time. In late spring, it is bottled in fine thick dark glass bottles.
The polyphenols in olive oil help protect blood lipids from oxidative stress. The beneficial effect is achieved with a consumption of 20 grams of oil (approx. 1.5 tablespoons) per day. (According to EU regulation LexUriServ. 432/2012).
