Vegan ice cream with lucuma
- 1 dl lucuma powder
- 2 dl natural cashew nuts (soaked for 2 hours and drained)
- 2 tsp real vanilla powder
- 0.5 dl coconut syrup, yacon syrup, agave syrup, or honey.
- 2 dl water
- 1 pinch Himalayan salt or sea salt (optional, enhances the flavor)
Blend everything in a good blender, pour into an ice cream mold, and let it sit in the freezer overnight.
Cocoa and spinach smoothie with lucuma
- 2 large handfuls of fresh baby spinach
- 2 chopped pears
- 1 tbsp cacao nibs
- 1 tbsp almond butter
- 1 tsp lucuma powder
- 2 dl water
- 2 dl ice
