Matcha tea is a fine powdered green tea used in Japanese Zen Buddhist tea ceremonies. It is whisked into a wonderfully bright green drink with a rich, full flavor. The tea bushes are shaded to protect them from the sun, and only the finest leaves are picked, which are then dried and ground in very special granite stone mills.
The matcha powder has the same properties as green tea leaves, but since the whole leaf is used, it becomes extra healthy. The antioxidant effect is extremely high. It is rich in vitamins A, C, and E. Matcha also contains the special amino acid L-theanine, which is found only in green tea.
This Matcha Tea is made from the Gyokuro tea bush (not from tencha or sencha). This means it contains a high level of amino acids, L-theanine, and caffeine – a combination that provides a smooth assimilation in the body. The tea is harvested only once a year from young spring leaves when they are at their most nutritious and potent in content and flavor. It is intended for daily use and also as a cooking ingredient.
Preparation: Matcha can be enjoyed as a hot or cold drink. Use 1/2 teaspoon of powder for a cup of water, cold or warm (hot, not boiling, about 80 degrees Celsius). Put the powder in the cup. Add the water afterward. Whisk thoroughly so the powder mixes well. The dose can be increased according to taste. It can be prepared thin or thick depending on how much powder is used. There are special bamboo whisks - you can find one here, but a battery-powered so-called latte whisk also works well. The main thing is that the powder mixes evenly with the liquid.
For a traditional preparation of matcha tea: Add 1-2 scoops of matcha powder with a bamboo scoop into a fine porcelain bowl. Pour in about 15 cl of 80-degree water. Whisk carefully and respectfully with a bamboo whisk until the matcha forms a frothy layer. Enjoy a quiet moment in silence.
Tips: You can also make matcha ice cream, matcha latte, matcha drinks, matcha cupcakes, and use it in noodle soups, miso, stews, bread baking, desserts, smoothies, yogurt, etc.
